Dairy Free Chocolate Cake

Ingredients

225g Dairy Free Margarine
350g Caster Sugar
3 free range eggs lightly beaten
1 1/2 tsp Vanilla extract
350ml dairy free milk (we use Oat)
** 300g Plain or Spelt flour
** 90g of Dairy Free Cocoa powder
** 1 1/2 tsp Bicarbonate of soda
** 1 tsp salt


Method

  1. Heat oven to 170 degrees (fan) and lightly grease and line your cake tins
  2. Using a hand held or stand mixer, beat your margarine and sugar together until light and fluffy (approx 5 mins)
  3. In a separate bowl sift the dry ** ingredients together and mix well
  4. Lightly whisk the eggs and vanilla extract together
  5. Add the eggs and vanilla slowly to the margarine and sugar mix (if it begins to curdle then add a spoon of the dry ingredients to the mixture)
  6. Then add the remaining dry ingredients and the milk alternately
  7. As soon as it looks combined transfer the mixture equally between the two tins and bake for 40-50 mins. Insert a cocktail stick into the cake, if its ready the cocktail stick will come out clean
  8. To make a simple frosting filling beat 150g of dairy free margarine until pale and fluffy then add 150g of sifted icing sugar and 20g cocoa powder and beat for 5 mins. Add a little dairy free milk to make the consistency lighter. You can also add your favourite jam as a filling or melt chocolate and pour it over the top of the cake.
